My Two Favorite Bread Recipes

Banana Bread

I found an awesome Banana Bread recipe a while back that my family truly loves. It makes the house smell super divine. I use Bob's Red Mill Gluten free 1:1 flour mix. I leave out the salt because I use salted butter which I melt in the microwave for about 30-60 seconds. It is super easy and completely amazing. I use a regular size bread pan. The website does have a gluten free version but I like to stick with the regular version. I am always trying to use the least amount of ingredients whenever I can and the simpler the better. I bake it for about 47-60 minutes depending on the temperature and the season.on 350 degrees. I hope you enjoy this recipe and the others on the website. Irish Soda Bread


You will need 3 1/2 cups of Gluten free All Purpose Flour blend. I have included the measurements below if you need to make your own. Use a spoon to scoop out the flour into the measuring cup and use a knife to level without compressing down.


These ingredients make 3 1/2 cups of Gluten Free All Purpose Flour Blend.


1 cup brown rice flour

1 cup white rice flour

2/3 cup of potato starch

1/3 cup tapioca flour

1 Tbsp xatham gum


Now proceed with the following steps.


If you have 1:1 gluten free all purpose flour blend on hand you can skip the above section. I like to use King Arthur's gluten free all purpose flour for this recipe because it is coarser and perfect for the Irish Soda Bread. https://shop.kingarthurbaking.com/items/gluten-free-all-purpose-flour


3 1/2 cups of Gluten free all purpose flour

1 tsp baking soda

1 tbsp coarse salt or 2 tsp table salt

1 1/2 cups of buttermilk or use regular milk and add 1tbsp of white vinegar and let it sit for 5 minutes.

2 tbsp sugar

Mix the ingredients together. Roll it into a giant ball and press down (see the picture above) and use a knife and place an large X on the top of it to release the heat while cooking.


Bake for 28-30 minutes at 425 degrees.


My family and I usually make this during the cooler months and enjoy it with some butter or soup or salad. It is simply delicious.
